I'm back and it's going to a better year!
Why have I been gone so long? Since the last week of October of 2011, I have slacked on a few things, all due to a very good reason or reasons I should say. Now before I start telling you all what has happened, I want you to remember that I like to make light of every situation. It's my way of not allowing life to "win" at this game we have to play. And of course, I remind myself that someone always has it worse. Seriously though, in all honesty, there was no laughter coming from us by the end of all this. So, here it goes...
October 31st...Darrell finds out that he has an infection. Don't ask me what the name of the infection was because once his doctor said it, my brain refused to hold onto the word. Oh, I will tell you though that it's an infection that men get. So a round of antibiotics and visit over.
November 6 th...Darrell hurts his ankle, badly, at his softball game. Emergency room visit to find out if it's a sprain or broken. X-ray shows it was as bad of a sprain as you could get. Sent home with pain meds and crutches.
At this point he is still taking his antibiotics for his infection, pain meds for his ankle and is unable to work for a week.
November 17 th...Goes back to the doctor because the ankle is still horribly swollen and Darrell cannot put any weight on it. More x-rays and MRI's to see if something isn't healing properly.
Antibiotics from infection are over with but still out of work.
Week of Thanksgiving:
November 21st...Darrell sees an orthopedic surgeon. Luckily no surgery is needed but has to wear a boot for two weeks.
Darrell is finally able to go back to work but since he does home theaters/data work, he is restricted. Hey, some work is better than none right?
The same day, I take Tyson to the vet due to some weight loss. After an urinalysis and blood work, I was told he had an infection but they are unable to find it at this point. Sent home with several antibiotics and told to increase his food by double.
November 22 nd...take another urine sample to the vets office to see if there is a change in Tyson. No new findings.
November 25 th...Take Tyson back to the vet for a checkup and more tests. Still unable to find the infection but he gained almost 10 pounds within that week, so that was a good sign.
December 5 th...Darrell goes back to the orthopedic surgeon. Ankle is doing better, but has to continue to wear the boot for another week then transition into a brace.
At this point we both are thinking ok things are getting better. Darrell's infection is gone, ankle is getting better, hes able to work, somewhat and Tyson is doing better. WRONG!!
That night (12.5) around 9pm Darrell starts complaining of bad stomach pain. Now, Darrell has had stomach problems his whole life so we thought maybe it was something he ate. He takes his stomach medicine and lays down. He complains that its getting worse and worse, to the point where I can hear absolute agony in his voice. We decided that it was time to go to the emergency room. Once he tried to get up and move, the pain got worse. I had to call for an ambulance. Seven hours later in the emergency room, we find out that his colon has failed and he was being admitted. When we heard the words" failed colon", we were like, what does that even mean? Well, no lies, it means just that!!
Darrell remained in the hospital for five days. I have never seen him in so much pain and discomfort, so weak and miserable. It was the longest five days we have ever had together. His week consisted of getting sick due to all the IV's, laying in the fetal position for almost three days straight, unable to eat for four days and unable to go to the restroom for almost four days. My week was hospital visits, very little work, home to get a few hours of sleep, to give Tyson his medicine and to keep things in order. In those five days, we only had about 20 hours of sleep...combined. Can't make that up. We received no answers as to why his colon failed, what caused it and yes, it can happen again. Apparently it's more common than we thought and it can happen to anyone at any given time. For those who know Darrell, you can only imagine what his attitude was like by the fourth day...it was the Darrell Park we all know and love (sarcasm)!
December 9 th...Home sweet home. Darrell gets released from the hospital. Several antibiotics and pain medications to add to the list. He decides to quit smoking, cold turkey, and change his diet. I'm very proud of him for doing both. I'm not a smoker and I eat pretty healthy so I can only imagine how hard it was for him to go from smoking everyday to not at all and eating fast food quite a bit to eating vegetarian once a week. Extremely proud.
At this point we both have had it and are completely exhausted from the past months "mishaps". That night Darrell looks at me and said "it cant get any worse". HA it can and it does!!
December 15 th...Darrell has to go to Chicago for work so Tyson and I go with him the night before and stay the night. Work for him and a little rest for me. Though Ty seemed to be getting better the first week of taking his antibiotics, at this point something just doesn't seem right. He has stopped eating, getting around is a bit of a struggle, he's coughing and his breathing is labored. On the drive up to Chicago, I asked Darrell, "what if Ty is slowly passing away"? Darrell's response was, " that could very well be but I want you to know you gave him an amazing life". Though it devastated me to say and think that, I now look back and realize that at that moment I knew it was the end for him.
December 16 th...This part is hard to get through still. I take Ty back to the vet for some x-rays. This time I'm not getting any type of good news. I'm only there to say sleep well my friend. I don't even remember making the phone call to Darrell letting him know Ty has cancer. He's asking me questions that I can't answer because I'm completely blank. He is there by my side within a matter of minutes. Believe me when I say that if I could have done something, I would have. The vet was certain Tyson wouldn't have made it another week. It was unknown if he would pass peacefully and did I really want to take that chance of letting him pass naturally when I didn't know? We did know that he wasn't in pain...yet and so we had to make that awful decision that no pet owner wants to make. I would continue but my eyes are filled with tears to the point where I can barely see the computer screen. To wrap this horrible day up...Tyson is home and buried in the five acres he used to run around on.


December 17th and18 th...The house is extremely quite and just not the same. After several phone conversations with Darrell's mom and facebook conversations with the wonderful Lynn Cloyd, Darrell and I decide to get out of the house and take a gander at some dogs that are up for adoption. I was unsure about this because I was miserable. Darrell convinced me to just test the waters. Surprised at how well we did with the dogs, we picked out three we liked and went home to talk about the options. We go back out on Sunday to another adoption site. Darrell and I both notice the same puppy at the same time. She's shy but comes to us and she has us hooked. Her name was Joy and born on the same date as Tyson was. Darrell said "well maybe this is a sign and she is going to bring joy to our life". Corny but he sold it...we take her home. Her name is now Luna and shes almost four months old. We couldn't ask for a better puppy.
Christmas has arrived and we are surrounded by friends and family. There is a sigh of relief, days have gone by, no surprises have popped up. Life is great and getting back to normal for us. We have a wonderful Christmas but cant wait for the new year. I don't even give 2011 a courtesy wave. Darrell and I reflect on everything that has happened the past few months and decide that 2012 is going to be different. We both have never been for resolutions but change is sometimes good and a list of ten resolutions is made for 2012. (Throughout the year I will be blogging about our ten resolutions and keeping you updated WHEN they get crossed off).
So there you go. That was how our year ended. Pretty stressful but we are a team and we pulled together. I don't think there is much more to say other than at any given point did you say holy crap?! Hope everyone had a safe and wonderful holiday season. Cheers to the new year!!

Saturday Yummies!
I was determined to get all my baking and freezer cooking done today and well, I succeeded! I started at 2 this afternoon and finally finished up around 830. Long time in the kitchen yes, but I love baking and I'm really getting into this whole freezer cooking world. So, without further ado, here was the menu for today.
I love the color of these muffins. A perfect golden color all around and then finding the deep red of the cranberries upon opening. I usually stick to the orange/cranberry combination so it was nice to change it up a bit with the tartness of lemon. This will be a keeper for me. I did change a couple things but for the most part stuck with the original recipe...
I used buttermilk instead of plain milk, replaced with oil with applesauce, used real lemon juice/zest instead of the extract because that's what I had on hand (I added the lemon to my liking so keep that in mind too), added 1/2 teaspoon of vanilla, added 1/2 teaspoon of baking soda and used dried cranberries that I soaked in warm water for awhile because that's what I had on hand.
I cant remember the last time i made chocolate chip muffins! I forgot how good they are. These turned out great! I love my chocolate so I'm pleased with how they're no too sweet for the morning but yet gives you the chocolate fix you need when that time comes.
Now I've made banana bread, pumpkin bread, strawberry bread and the likes, but I have never made any type of yeast bread or roll before so I was nervous on how this would turn out. I was planning on taking full responsibility of failure. Pat on the back for me, I had no issues with these rolls. Beginners luck maybe, who knows. I recommend this recipe, its easy, just time consuming only because of all the waiting and rising.The smell won me over, as everyone knows the smell of fresh bread is divine and the taste took me by surprise. These can be used for many things or just enjoy by eating plain.

All I'm going to say about these warm, golden, buttery, pieces of heaven is that you will have to make them yourself! As soon as I came across the recipe it went to the top of the pile. Darrell was at my side when I was pulling them out of the oven. I think this recipe was the most anticipated out of the bunch. So simple and easy to make, you will NOT regret it! Though there is only seven in the picture (Darrell and I split one right out of the oven, you gotta try one right?) the recipe makes eight good size pretzels. I highly recommend using parchment paper as stated in the recipe because the will stick to the baking sheet if you don't. I'm here to tell you I learned that first hand!

Thanksgiving Stuffed Belly!
Every year on Thanksgiving, during the expanded cheeks of turkey, mashed potatoes and gravy, we say aloud what we are thankful for. It's entertaining to hear the responses, most are pretty basic but you get a few that are colorful. So, as I sit here and stare at two piles of clean clothes that are patiently waiting to be folded, I wanted to quickly say my thanks. It doesn't take much to know that I absolutely love every aspect of my life! I can say that with all honesty. Sure life gets rough and bumpy, I make mistakes...plenty of them and there is a tiny bit of stress that I allow to come my way, but I wouldn't change it for the world. Besides, all that, makes life interesting and contributes to memories and stories. Life is a constant learning process and I'm taking it one day at a time, learning as I go and doing what I can to succeed in life.
Times obviously have change and we all know that it's becoming harder to get by. I never take anything for granted because there is such a thing as karma in my book. I count my blessings and believe in the saying, "the more that you own, the more that owns you"! It would be selfish of me to complain about anything in my life, because sadly there is always someone that has it less fortunate than you. I've gone through this wonderful Thanksgiving day thinking about all that I have and all who are in my life. So, I send out a HUGE THANK YOU to all my family, friends and to the one who changed my life for the better, Darrell. Not only for today, but I want to thank you EVERYDAY for being in my life. You have seen me through thick and thin, when I'm at my worse and best and have allowed me to be me without criticism, the love I have for all of you is great. Lastly, I do have to send out a tremendous thank you to Darrell and his entire family. His family has accepted me from day one and has given me love and support like I was one of their own. They have shown me what the true meaning of family is. To Darrell, thank you for making me fall in love with you and making sure that I laugh everyday. I cherish that simple gesture.

The first "guy" that stole my heart!
It's not all about me! Nor is my first...EVER...blog ( I beg you to bare with me as I learn). It started over nine years ago, well let's just be exact, August 18th 2002. I was there watching as he entered this world. When you look at him now, you wonder how he could ever fit in the palm of my hand. So cute that you wanted to put him in your shirt pocket and let him hang out. I gave him bottles when he needed them and watch him become what he is today. Well this "guy" is not a child ( I don't have any) and it's not my wonderful boyfriend...yes Darrell is cute but the whole hanging out in the shirt pocket thing...!
The first guy to ever steal my heart, wait for it...is my American Bulldog, Tyson! Those who know me would completely agree. He is one part of the "and 2" on my blog. You'll find out who the 2 is later, but for now, mystery. Though Tyson is not human, he is my child. He is spoiled beyond belief. Sometimes I'm jealous of his life. He drinks purified bottled water and has a memory foam mattress bed, there I said it. Quiver!!! Like I said before, I've been there since day one. It took all but two seconds for him to steal my heart. He knew what he was doing...and still does. I'm a sucker. He shares being the love of my life, with my boyfriend. Ummm, let's face it, Tyson agrees with me that I'm always right, so yeah the points put him in the lead at times. Just kidding honey...back on topic.
I chose to write about him for my first blog because this past week has been rough for him. In all seriousness, I'm probably taking it harder than he is. Tyson has had major skin allergies his entire life. Hot spots, hair loss, scars from constantly scratching, dry flaky skin, his white furred face turns red, the list goes on and on. Any pet owner that has dealt with these issues can relate. Twice a year, for nine years, he has taken antibiotics and steroids. The cycle goes on and on. Thankfully, Ty is a gentle giant, loves everyone and goes about his day like nothing bothers him.
This past year, Darrell (boyfriend) and I gained some hope. Tyson's skin was clearing up, hair was growing back and his licking and scratching was almost absent. He became more active, wanting to be outside with us more and so on. Ty started loosing some weight, which was good because he was a hoss. We were told it was normal since he wasn't taking all the meds. We were happy for him! Soon that hope we thought we gained, we bid farewell too. Me of course, I was holding on to hope with white knuckles. This very short story timeline of his life has brought us to date. I took Tyson to the vet this past Monday to get him checked out. His weight was becoming a concern for us. $320.00 later and clean blood work, we found out he has lost 30 pounds (he was 96 lbs) and has an infection somewhere, yes somewhere. Tuesday comes around with another $60.00 spent on a urinalysis, which comes back clean and still unknown where the infection is coming from. Ty was sent home with 2 different antibiotics and we were told to double his food intake, this means 12 cups a day. We are at a stand still with a very belly full and drugged up dog, he still takes benedryl and fish oil for his skin. Possible x-rays are to come Friday and with crossed fingers and toes an answer.
As all pet owners know, you get to the point where frustration sets in. Today was the day it set in with me. So what better way to rant about it than on a blog? I'm not an angry person, there is not much that bothers me, but this has really got me frazzled. I have lost sleep, cried and at times walked around with a blank look on my face (this is possibly a normal look for me and no one has the heart to inform me). I've never been in this situation before. I'm starting to loose confidence even though I know I shouldn't. How much farther do you go before you have to say stop due to unanswered questions and all that spent money? The wallet doesn't want to come out of my purse anymore. Some will ask...all this for a dog? I say yes. No matter what trouble or mischief Ty's gotten into or how much he can be a pain in the butt sometimes, we have been by each others side for so long. He puts a smile on my face every time I look at him, he has been my protector when I'm home alone, my co-pilot in my car, my walking buddy and yes he's a fa-nominal listener. He truly is a best friend. That is where I'm at with all this. Trying to make sense of it all and putting it all together but I remain confused. Any similar stories out there? Please share!
